Broiled Salmon with Citrus Glaze

Broiled Salmon with Citrus Glaze

1 - 1 1/2 lb. samon washed patted dry with pin bones removed

3/4 cup brown sugar

1 Teaspoon Limon zest + or -
dash of salt and peper

coat fish with olive oil

Directions
Position a rack in the oven 3 inches (second level) from the broiler. Line a cookie sheet pan with aluminum foil and place the salmon on the pan skin side down.

mix sugar, zest, salt and peper in a bowl and pat on fish

allow to sit for 45 minutes, at room temperature.

Turn the oven on to the high broiler setting for 2 minutes. After 2 minutes, place the salmon into the oven and broil for 6 minutes.

Remove the salmon from the oven and allow to rest, uncovered, for 8 to 10 minutes on a rack.

Serve immediately. I also like to add a fresh limon or lime juice to my plate.
